Tenderize the meat: boil 1-1.5kg oxtail and tripe in a big pot of water until tender. Take the meat out and save 550ml of the broth.
Make the sauce: pour the hot broth back into the pot, drop in 1 Kare-Kare Bomb and stir over low-medium heat until it melts into a thick, creamy sauce. Put the meat back in for a few minutes.
Add blanched pechay, string beans and eggplant last, and serve with bagoong and rice.
