Prep the tripe: boil 1kg ox tripe for 15-20 minutes with a pinch of salt and half a lemon or 2-3 tbsp of vinegar, then rinse. Simmer it in fresh water for 30-40 minutes until tender, and save 3 cups (710ml) of the broth.
Make the callos: sauté 300g chorizo and 200g jamón serrano in olive oil, pour in the broth, drop in 1 Callos Bomb and stir until it's dissolved. Add the tripe and garbanzos, cover and simmer over low heat.
Serve hot with crusty bread or rice.
